All cells contain an enormous variety of phospholipids as
major components of their membranes. The ability of
phospholipids to assume the bilayer organization characteristic
of membranes is determined by their amphipathic
nature that results from the presence in these molecules of
a hydrophilic head group and a hydrophobic region.
Although the chemical nature of the different phospholipids
can vary substantially, the final macromolecular organization
