bstract ? Sugarcane is rich in dietary fibers that havebeneficial properties in gastrointestinal tract. In addition thesugarcane is well known for its protective role in mammalianhealth. However, the sugarcane industry produces vastquantities of residues. Sugarcane blunting (waste producedby the sugarcane industry) was fermented under differentconditions: using native microbiota (control), using specificgoat probiotics, including Lactobacillus reuteri DDL19(Treatment Nº1), Lactobacillus alimentarius DDL 48(Treatment Nº2), Enterococcus faecium DDE 39 (TreatmentNº3), Bifidobacterium bifidum DDBA (Treatment Nº4) and aprobiotic mixture containing equal amounts of the fourprobiotics (Treatment N°5).
