Honey samples from Catamarca (39) were analyzed. A strong correlation between colour, flavonoid content, polyphenol level and antiradical power was found, being darker honeys those with higher antioxidant capacity. Multivariate statistical analysis showed a close relationship between the botanical origin of the honeys studied and the physical-chemical variables (polyphenols, flavonoids, antiradical power, protein, ash, acidity and colour). In relation to the botanical species whose pollen were detected in honey, it was observed that the level of species such as Prosopis and Larrea were inversely related to the antioxidant capacity, while others like Cercidium contributed positively. Honeys from Catamarca presented features that are misappreciated by the consumer: dark colour, high ash content and high acidity. The data from this research together with that from other authors denote that these parameters are strongly related to increased antioxidant capacity suggesting that the concept of honey quality should be reviewed.
